These 3 Boozy Popsicles Are Our New Obsession (plus a kid-friendly version)

Like cocktails? Like ice pops? Let’s combine the two and make boozy ice pops for the weekend! You in? Yes? YAY! Let's get to it!

Bloody Mary Pops

YIELDS: 10 servings | PREP TIME: 15 minutes | TOTAL TIME: 15 minutes plus 6 hours of freezing time

INGREDIENTS

* 2 c. tomato juice
* 2 oz. (1/4 c.) vodka
* 2 tbsp. Worcestershire sauce
* 1 tbsp. pickle juice
* 2 tsp. hot sauce (such as Tabasco)
* Juice of 1 lime
* 10 celery sticks, cut 5" in length
* 1/4 c. flaky sea salt, for garnish
* 2 tsp. Old Bay seasoning, for garnish

DIRECTIONS

1. In a large liquid measuring cup, whisk together tomato juice, vodka, Worcestershire sauce, pickle juice, hot sauce, and lime juice. Carefully pour mixture into popsicle molds, then insert a celery stick into each pop.

2. Freeze until solid, about 6 hours.

3. Run warm water over molds to loosen popsicles. Sprinkle each popsicle with flaky sea salt and Old Bay, then serve immediately.

Boozy Piña Colada Popsicles Recipe

A balanced popsicle of rich coconut cream, punchy pineapple, and a splash of rum to bring it all together. This recipe is formulated to make six 3-ounce popsicles, but you can scale it up or down as needed to accommodate popsicle molds of different sizes and numbers.



YIELDS: six 3-ounce popsicles  | PREP TIME: 10 minutes | TOTAL TIME: 10 minutes plus 4 hours freezing time 

INGREDIENTS

* 8 ounces cubed pineapple 
* 8 ounces unsweetened coconut cream, shaken or stirred well to incorporate fat
* 2 ounces granulated sugar
* 1/2 ounce white rum 
* 1 1/2 teaspoons fresh lime juice from one lime
* 1/2 teaspoon kosher salt; for table salt, use half as much by volume

DIRECTIONS

1. In a blender, combine pineapple, coconut cream, sugar, rum, lime juice, and salt, and process until very smooth, about 30 seconds.

2. Divide mixture evenly between six 3-fluid-ounce popsicle molds and freeze until solid, at least 4 hours. To unmold, follow your popsicle mold's instructions.

Grapefruit & Tequila Paloma Ice Pops

YIELDS: 8 popsicles  | PREP TIME: 10 minutes | TOTAL TIME: 10 minutes plus 8-12 hours freezing time 

INGREDIENTS

* 2 cups fresh grapefruit juice
* 1/4 cup lime juice
* 1/2 cup simple syrup
* 1 1/2 cups Casa Amigos tequila
* 1 cup club soda
* 1 cup orange juice
* flaky salt
* grated lime zest

DIRECTIONS

1. In a large bowl, mix together grapefruit, lime, simple syrup, tequila, and club soda.

2. Fill the popsicle molds 1⁄3 full with the mixture and put in the freezer to freeze.

3. Once frozen, take out and add the orange juice and freeze again.

4. Lastly, once frozen, add the rest of the grapefruit liquid and freeze one last time for at least 8 hours.

5. Serve with a mixture of salt and lime zest.

TIP: Because alcohol does not freeze, some of these pops will not get completely frozen. They’ll all freeze a bit different; the more alcohol in them, the less hard they’ll be. Turn your freezer up high and you’ll be fine!

ALCOHOL-FREE FUN VERSION: Coconut Lime Popsicles

YIELDS: 12-14 popsicles  | PREP TIME: 20 minutes | TOTAL TIME: 20 minutes plus 3 hours freezing time

A light and refreshing anytime-of-the-year confectionary treat that everyone will love. 

INGREDIENTS

* 3 cups coconut milk
* 1/2 cup maple syrup
* ½ teaspoon salt
* 1 tbsp vanilla
* 1/2 cup sweetened coconut
* 2 limes

DIRECTIONS

1. Whisk together the coconut milk, maple syrup, salt and vanilla in a large bowl and the place in freezer for 1 hour.

2. Remove and add juice from 2 limes and freeze another hour until mixture starts to thicken.

3. Add coconut and lime zest from the two limes and then pour into popsicle molds and place in freezer until set.
